Easy Tomato Soup
I large onion, peeled and chopped
4 large tomatoes chopped
1 400g tin chopped tomatoes
½ red chilli remove seeds and chop (optional)
700ml vegetable stock
Basil leaves (optional)
Salt and pepper to taste
Splash olive oil
Add oil to the pan and add onion and cook until almost soft, add tomatoes and cook for 5 minutes until breaking up in the pan. Pour in vegetable stock, add plenty of salt and pepper then add tin of chopped tomatoes and allow to bubble. (If you want a bit of spice add the chilli now). Give a good stir and whizz in a blender for a minute until smooth.
Break up basil leaves and top on serving.
