Marrow Soup with Curry

I medium Marrow chopped (can swap for courgettes if preferred)
2 onions chopped
1 heaped tbs curry powder
500ml vegetable stock
Salt and pepper to taste
2 tbs oil

Add oil to large saucepan and heat, add chopped marrow and onions and a generous pinch of salt, stir and turn to a low heat and allow the vegetables to sweat, this should take around 15 – 20 minutes. When the marrow and onion are soft add the stock and the heaped tbs of curry powder and black pepper allow to cook for a further 10 minutes, taste and add additional salt and pepper if required. Put through a blender until smooth and ready to serve.
