200g mixed dried fruit
100g dried dates
300ml strong hot tea
250g Wholemeal spelt flour (or wholemeal flour)
50ml Maple syrup
1heaped tsp baking powder
1 tsp ground allspice
2 eggs, beaten
Preheat the oven to 180 C / Gas 4.
Make tea in a bowl and add dried fruit to tea for minimum of for half an hour. Leave tea bag in and remove when ready to add to mixture.
Mix dry ingredients together. Drain tea from fruit, remove tea bag and add together with the beaten eggs. Gently mix all ingredients together.
Place in buttered loaf tin and Bake at 180 C / Gas 4 for 1 hour.
Cut in to slices and halve again for a daily treat
